Oatmeal Scotchie Cookies

Oatmeal Scotchie Cookies

I remember when Mom used to make these when I was little. I loved them! Dan and I ate half the batch tonight. They were really good.....

Oatmeal Scotchie Cookies

1/2 plus 1/8 cup flour
1/2 tsp baking soda
1/4 tsp cinnamon
1 stick butter softened to room temperature
1 1/2 cup sugar....half white, half brown
1 large egg
1 tsp vanilla
1 1/2 cup oatmeal
1/2 plus 1/3 cup butterscotch chips (half a bag)

-Pre-heat oven to 375 degrees
-Mix dry ingredients in one bowl and set aside
-With mixer in 2nd bowl, whip up sugars and butter.
-Once creamed well, add egg and vanilla to mixture and blend well with mixer.
-Add the dry mix to the wet mix now mixing with a wooden spoon.
-Once blended well, hand mix in the butterscotch chips.
-Use a small spoon to get dough out of bowl and make cookie dough balls.....they are very sticky.
-Place cookie balls on baking sheet. Do NOT smash down. Leave as balls.
-Pop in oven for 8-10 minutes, or until the edges of the cookies JUST START turning brown.
-Remove from oven and let sit for 2 min on cookie sheet.
-Remove cookies from sheet and place on cooling rack.

  1. You might as well eat them right away, they are best fresh. Funny Ardelle keeps popping up, because she is the one who showed me that recipe on the bag. I am going to try your Latin chicken recipe when I get back from Fargo. Headed over there for the boys birthday. Miss you, Mom
