Lentil Side Dish

Lentil Side Dish
1 tbl butter
3/4-1 cup Bella Mushrooms diced coarsely
1/2 cup red bell pepper diced coarsely
1/2 cup green bell pepper diced coarsely
1/3 cup diced onion diced small
1 cup lentils
1 tsp garlic powder
sea salt and fresh ground pepper to taste
2 tbl basil pesto
Cook lentils according to directions.
While lentils are cooking, dice up veggies and throw in a pan with the butter, and garlic powder.
Saute veggies for 5-7 min or until tender. Set aside.
When lentils are done, drain and rinse.
Add the lentils to the veggie mixture, along with the basil pesto and salt and pepper to taste.
This is one recipe where I DO use salt.

  1. Gotta make the basil pesto and then try this. I ate a leaf or two off a plant at pamida yesterday, I guess I should go back and buy it.
