Basic Basil Pesto

Basic Basil Pesto

The pesto in a bag.
Serve over fettuccine with sweet peas!

Serve mixed with fettuccine and sweet peas!

This was not Dan's favorite mixed with pasta, but to me it tasted like a "girl" thing. I thought it was had a natural/earthy taste.

Basic Basil Pesto
2 1/2 cups fresh basil leaves
1/2 cup Parmesan cheese
1/2 cup extra virgin olive oil
1/3 cup walnuts
3 medium sized garlic cloves
salt and pepper to taste

-In food processor, put Parmesan and basil and food process for about 45 sec or until finely chopped. Remove and set aside.
-Put garlic in processor and buzz until finely chopped. Add nuts to garlic and buzz a few times
-Put reserved basil mixture and remaining ingredients in the processor. Process until well blended, about 30 seconds.

Enjoy over crusted bread, pasta, veggies, or even a spread on a sandwich.
Can make big batches and freeze in bags or cube trays.
This basic recipe could be jazzed up in many ways depending on what you will be using it for.

  1. I LOVE pesto, you should totally try it with with pine nuts! I don't blend mine. Just heat garlic in EVOO (with a bit of dried red pepper flakes for a hint of spice) and then add finely chopped basil and whole pine nuts and then toss in spaghetti noodles. Top with Parmesan :0)
