I call these Teamwork Ribs because I do the first part, and Dan does the second part. :) They are DE-LI-SHOOOOOOOSSSS! .....They just fall apart.....We only cook 1/2 a rack at a time cause there is only two of us....(about 6 ribs)
Fresh Ground Pepper
1/2 Rack of Pork Spareribs
Baby Rays BBQ Sauce (HAS TO BE BABY RAYS!)
Generic Brand Mesquite Smoking Wood Chips - soaked
Brown Slab of 6 ribs in pressure cooker. Brown BOTH sides. As each side is browning, season with pepper, and salt.
After both sides have browned, place pressure cooker rack under the ribs.
Add 1 - 1 1/2 cups of water.
Close and seal pressure cooker.
Heat until rocking steadily at med. speed.
Rock at med. speed for 20 minutes.
Turn off heat.
Turn on grill. High Heat.
Patiently let pressure cooker de-pressurize.
Carefully remove ribs so as they DON'T fall apart. (they will want to)
Put wood chips in grill, and also the slab of meat.
Turn Heat to med-low. Cover the top of the slab with sauce.
Turn when the bottomside is seared. (A lil crispy)
After turning, up the heat a lil so the second side can also be seared.
Put sauce on the 1st seared side, which should not be on the top.
Crispiness is the key.....
Some may like extra BBQ Sauce for dipping.....BABY RAYS! BABY RAYS!
If you know how to grill, you didn't just need my step by step grilling instructions. But I'm not the griller in our house...... I just typed everything Dan explained to me. So if you know how to make em crispy w/o my instructions, go for it:)
P.S. If you don't have a pressure cooker....go get one! They are the BOMB!
