Spicy Shrimp Burger w/ Cajun Dippin' Sauce
From the time I mixed these up, till the time I put it up to my mouth for my first bite, I was doubting this burger....But the first bite changed that! It was delish!
2 cups small salad sized frozen shrimp- thawed and drained.
1 lrg lightly beaten egg
1 tbsp mayonnaise
2tsp lemon juice
1/4 tsp ground red pepper
3 tbsp finely chopped celery
2 tbsp minced onion
1 tbsp chopped fresh parsley
1/3 cup corn meal
1/2 cup Italian Bread Crumbs
1 tsp ground flax seed (optional)
1 tbsp olive oil
-Squeeze out shrimp well so they are not full of juice
-Mix in with shrimp, the egg, mayo, lemon juice, and red pepper.
- Mix in the rest of the ingredients.
-It won't look like it is ready to make patties, but giver a try......they may look delicate, be careful.
-make 3 patties about 4 inches across, and 1 inch thick....
-Place patties on a pan covered with a grocery sack that has been sprayed with cooking spray.
-cover patties and pop in the fridge for at least 1 hr, ....up to 24.
-transfer to freezer for 30 min.
-Remove from freezer
-Heat olive oil in non-stick pan over med/high heat.
-cook burgers 4-5 minutes on each side
-serve on toasted buns with Cajun Mayo
Cajun Mayo Ingredients
-1/2 cup mayo
-2 tbsp chopped fresh parsley
-2 tbsp horseradish sauce
-1 1/2 tsp lemon juice
-1 1/2 tsp Cajun Seasoning
Mix it up and chill covered in fridge
