This salsa is a nice refreshing break from that overly salty, soupy, cheap, buy by the gallon stuff. This salsa can be cut as fine or chunky as you like it......and the portions too.....This recipe is simply a guideline to the salsa you will make yourself. Everyone likes their salsa a lil different......May I advise you to make more than you think you will need......I always find myself eating it all either b4 I need it, in one sitting, or at the best case scenario-eating the leftovers by the bowl. Kinda like a healthy lil salad.
Two cloves of garlic chopped very fine
One or two large tomatoes diced fine(or 4 /5 plum tomatoes)
1/2 white or red onion diced fine
1 1/2 jalapenos diced fine(if you do not like it hot...remove the seeds) Nice little handful finely chopped cilantro(use what you like...we like a lot)
Juice of one lime or (1 tablespoon lime juice from bottle)
1/2 teaspoon apple cider vinegar
1 avocado diced (I didn't have it this time...but it is soooo good in this salsa)
salt and pepper to taste.....
let it sit a few hours in fridge or even over night.
Serve with any Mexican Food or chips.....
Other suggestions - Corn, black beans, green or red pepper....I have a feeling the possibilities are endless. :)
I find myself eating it straight by the bowl full.....haha
