Wild Rice n Chicken Soup





Wild Rice n Chicken Soup



This is a yummy recipe from the Healthy Cooking link. I did modify though, n will put in ( ) what I did different. :)





Ingredients:
2/3 cup uncooked wild rice - (2 cups cooked)
2/3 cup chopped onion (3/4 cup)
2/3 cup chopped carrot (3/4 diced small...like same size as frozen diced peas n carrots:)
2 tablespoons butter
6 cups reduced-sodium chicken broth
2 medium potatoes, peeled and cubed (yielded about 2 cups....diced not much bigger than the carrots.)
1/2 teaspoon salt (pinch if even at end....see what you think)
1/2 teaspoon pepper (about 35 twist of the pepper grinder.....not for kids though...if making for kids, each person can put their own pepper in.)
1 cup chopped fresh broccoli (I didn't have broccoli, but i bet it would be good)
3 cups cubed cooked chicken breast ( I found 2 cups to be enough.....would be good soup to make with left over chicken too)
1/2 cup all-purpose flour
1 cup fat-free half-and-half ( I used about 1 1/2 cup skim milk)


Directions: Cook rice according to package directions. Meanwhile, in a large saucepan coated with cooking spray, cook onion and carrot in butter for 2 minutes. Stir in the broth, potatoes, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. Add broccoli; cook 3-7 minutes longer or until potatoes are tender. (I didn't have broccoli, but found after 10 min, the potatoes and carrots didn't need the extra time.) Drain rice if necessary; fluff with a fork. Stir chicken and rice into potato mixture; heat through. In a small bowl, combine flour and half-and-half until smooth. Gradually stir into soup. Bring to a boil; cook and stir for 2 minutes or until thickened.

  1. We will be having this for supper tomorrow night. I have to post Dad's pizza on here because it really was a work of art. Made it last night and I took pics. Love Mom.
